Tasty Treats


With the onset of cooler weather and especially the rain that we received yesterday I thought it would be fun to make some hot cocoa. So I did some searching and found a new recipe to try...(Coming soon) It made a wonderful treat for nice quiet evening in.

I also decided to make my favorite chicken salad. It's a quick and easy dinner that's yummy and filling. I think I originally got the idea from a home catalog but because I can't locate the actual recipe we'll call it the Fall Chicken Salad.

Fall Chicken Salad
(I don't include quantities because I find on some things it's better to do things to taste)

Fresh Baby Greens or Greens of Choice
Cut Green Beans or Substitute with Sugar Snap Peas
Corn
Black Beans
Red/Orange/Yellow Pepper
Tomato
Cheese

Red Wine Vinegrette/Balsamic/Italian Dressings all seem to taste pretty good

For the chicken: I usually figure about 1 Boneless/Skinless Chicken Breast per serving
Use dressing of choice to cook chicken in skillet (approx. 3 TBS)
Cook chicken until cooked through and lightly browned on either side

Slice Thin and serve on top of salad

yumm! I've always LOVED corn on a salad. This sounds delicious!

I was just thinking yesterday about putting together a hot cocoa mix. My favorite Food Network Chef (Alton Brown) has a recipe that I haven't tried yet. I'll give it a whirl and let you know how it goes.

I don't judge books by their cover, but I sure judge food by how it looks and your Chicken Salad looks great. I also agree that the cook should take the liberty to use his or her judgement on proportions (and even content, if you don't have some ingredient, get creative and substitute. Except for the key ingredients, of course. Hot chocolate is to be judged by taste, they all look alike.
